Usage: This is the one to thicken gravies or sauces with a clear appearance and smooth texture--no starchy flavor, lumps, or long cooking like flour. When substituting for flour, use on a 1-3 basis (1 tablespoon of arrowroot in place of 3 tablespoons flour). Or, in place of cornstarch on a 2-3 basis (2 teaspoons arrowroot in place of 1 tablespoon cornstarch).
