Caribbean Jerk Seasoning Recipes

Jerk Seasoned Salmon
3 pound boneless, skinless salmon filet
1 tablespoon Spice Barn Caribbean Jerk Seasoning

1 1/2 tablespoons olive oil

Place salmon on roasting pan; sprinkle on one side with jerk seasoning.  Drizzle with oil.  Cover and chill 2 hours.  Bake at 350 degrees for 20-25 minutes or until fish flakes with a fork.  Serve with Mango Salsa.

Spicy Jerk Cashews
1 1/2 teaspoons butter
2 cups salted whole cashews
2 teaspoons fresh grated orange peel
2 teaspoons Spice Barn Caribbean Jerk Seasoning

Preheat oven to 350 degrees.  Melt butter in baking pan in oven; stir in remaining ingredients. Bake 20 minutes; stirring every 5 minutes.  Let cool in a single layer.  Serve.

Grilled Jerk Shrimp
1 1/2 pounds unpeeled, large fresh shrimp
1 tablespoon Spice Barn Caribbean Jerk Seasoning
7 ounce can tomatillo salsa
1/4 cup mayonnaise
1/4 cup sour cream
1 small jalapeno pepper, seeded
1/4 cup minced sweet onion
1/2 teaspoon Spice Barn Ground Cumin

Peel shrimp and devein. place shrimp in heavy ziplock bag and add jerk seasoning. Seal and shake to coat.  Chill 1 hour.  Thread shrimp onto skewers.  Grill, covered, over medium high heat 2 minutes on each side.  Stir together salsa and next 5 ingredients.  Serve shrimp garnished with fresh cilantro sprigs.  (May substitute chicken for shrimp).
