Other Information: There
are several varieties of cinnamon-producing trees which characteristics
which differ according to the area from which they come. Some resemble
bushes which others have trunks which are 5 feet in diameter. At
harvest, the bark is slit and stripped off both trunk and branches. It
then curls up tightly making long, slender "quills". This is what we
know as cinnamon sticks. Some comes into the United States in lengths
up to 30 inches. As with other spices, cinnamon retains its aroma and
flavor longer in the bark, so it is always ground in this country to
retain freshness. |
