Beer powder is a product produced by concentrating and spray-drying beer onto a maltodextrin carrier. Because it is a powder is has advantages over liquid beer. The drying removed the water and alcohol allowing the beer flavor without concerns about flavor stability, safety, and licensing requirements. General usage levels fall between 1.5% and 3% with the lower level functioning as an enhancer, while at higher levels it offers stronger beer notes. In hot, spicy foods, beer extract powder rounds off the initial burn, allowing the flavor of peppers and seasonings to come through with the heat gradually building.
